“La Piazzetta” restaurant’s menu this year is enriched with an old pasta of the lucchese tradition: the Cappelletti or “hats of Pinocchio”
A very hard work to do at home, so we’re losing their memory. Cappelletti are two dry pasta discs that recall two hats produced by a single pasta factory in the province of Lucca, the Mennucci pasta factory which is paired and a small dumpling made of fatty beef, egg, mortadella and herbs Local aromatics. During the summer in Camaiore is a festival to keep the memory and tradition and we decided to let this dish be known to all our guests. They are flavored with meat ragù sauce with Parmigiano cheese
